Cold morning called for a hot breakfast, so made French toast and some sausage, with some cocoa. It was good, though personally, I prefer Italian bread for French toast since it can be cut on the thicker side.
@NinChocolate That looks really good. I must ask, is that homemade fried rice? Curious as I like making homemade fried rice as a side on some nights.

@NinChocolate Cool, never once thought about baking rice. I've always fried it or boiled it, and when I tried making stuffed peppers, it was in the filling. The filling even tastes great alone too.

Tonight, i made blackened tilapia fish tacos with mango Pico de Gallo, shredded cheese, cilantro, and spicy sour cream( Sriracha mixed with sour cream).
Tonight, made linguine and clam sauce for my mother. Clam sauce is basically the juice from a can of clams, a bit of olive oil, garlic (either clove or powder), parsley, and of course the clams. One of the more simpler dishes I make.
I'm not big on seafood, aside from a few things, so I just had pasta in some tomato sauce I microwaved and Romano cheese (apologies if it looks messy a bit, I had to mix it).
@NintendoByNature Cool, that reminds me, I made breaded tilapia last night. That and salmon is actually the few fish I will eat as I'm not big on seafood.

@NinChocolate you can buy the roux cubes at any Japanese store but I only use them when I am lazy.
Basically I make a bechemel sauce, with caramelized onions, carrots, broccoli, chicken broth (from poached chicken that also goes into the stew, potatoes (not this time since I’m using dumplings ), mushrooms, green peas or edemame, butter, cream and a dollop of sour cream to balance the mellower flavor of the sauce. I will sometimes add a small amount of gyuere to add a nutty flavor but not enough to make it cheesy. Pepper and a hint of cayenne and smoked paprika (I don’t cook with salt) to taste (these are not normally added but I like heat).
Oh and a can of tuna. A website I follow does this and it surprisingly punches up the flavor. And I don’t like tuna, but I buy a few cans for that now. The tuna should not work but it does.

@Ryu_Niiyama Sounds nice. I've been learning to cook some Japanese food for a few years now, ever since my mother treated me to a small Japanese cookbook.
@NinChocolate Thanks! Clearly not much work went into mine as I'm not big on seafood, but more work goes into the clam sauce. It's an easy dish as it's just oil, seasoning, and a can of minced clams (usually we get the Snow's brand, it's usually located in the tuna aisle).
The key is to saute the clove of garlic in oil (don't leave it in and brown), add the clam juice and parsley, heat it up, then keep it on the lowest setting while pasta cooks. Add the clams right at the end to warm it up. If the clams cook, it can become rubbery as my mom puts it. Serve it on top of pasta.
@Sunsy might I recommend justonecookbook.com ? I have a few stand alone Japanese cookbooks, but this site has been my go to for almost a decade.

@NinChocolate isn’t it though? I make a gruyere, cheddar and harvarti mac and cheese that will put a person in a food coma. I love gratins as well with the bubbly cheese up top. I’m actually mildly lactose intolerant but I’m willing to suffer for the tasty.

@NinChocolate Looks good, I never made homemade salsa before. I would love to learn to make homemade nachos. Tried once but I don't think they came out as good. Though, I do love making quesadillas, on the subject of Mexican food.
@Snatcher I think I'd be a cook cook too, I actually love making homemade food. Especially Italian, my mother's side of the family is Italian, so a lot I learned was from her. Planning to make meat sauce sometime soon. Not only great on pasta, but put some on top of a hot dog with crushed red pepper, it's so good!
