I'm not making anything at the moment, but when my birthday rolled round in November, I actually baked my own cake! It was this chocolate cake with sheer MOUNTAINS of frosting and sprinkles. It was a bit uneven and it did sink into the plate HARD, but it was the best thing I could've possibly asked for...
OK, I did also get a new Switch and BDSP that day so it may have a bit of competition in that department but still, twas a labour of love.

I've tried my hand at baking macaroons. Chocolate ones! They got better with each attempt, I might give them another shot over the weekend. They are tedious to make but I do like baking. And they taste so good even if I can't get them perfectly smooth.
This sounds like my kind of thread as I usually love to cook. I'd say I'm a decent cook. I love cooking Italian. Made lasagna near the beginning of the year, and homemade meatballs. Did make stuffed peppers for the first time last month. As with any first time recipes, it wasn't perfect, but it's something I can try to get better at over time.
Also, awhile back, I learned how to make homemade mac and cheese. Really surprised how well the cheese sauce came out.
Apologies if it's not anything baked. Since you asked "whatchu got cookin?" I thought I'd mention some of the stuff I sometimes cook.

@Sunsy i edited the title in case people think it’s only for baking. I’d like to hear about any kind of cooking! Stuffed peppers sounds awesome. I did some stuffed poblano peppers with beans and cheese not long ago, so tasty 😋
As per my previous post, I decided on making a chocolate walnut cake using oat flour (I love oats!) and utilized hazelnut spread instead of butter. Also made a medjool dates glaze to top it with
Thats a odd way to spell "Flex on snatchers cooking skills"
FR, I would say I'm pretty good, I just make very simple stuff tho...egg. But if you come to me about hot chocolate, Ya I would say i'm pretty boss at it.
@NinChocolate You never know what might happen during the next year. I could become the next Mary Berry for all I know.

For xmas I decided to cook a turkey wellington. I shoved into it cranberry jam, stuffing and pigs in blankets and some other bits into it's centre. The brilliant part of that is you don't have to cook as many sides which would take up precious space in the oven.
I've somewhat recently bought an electric pellet smoker ( about 5 months ago) so I've been using that thing left and right. Smoking turkeys, to pork butts, chuck roasts, and smoked cream cheese dips. All sorts of goodies. It's been the beat investment I've made since the switch.
@NinChocolate they're super easy to use, if you go electric pellet style. I highly recommend it. I can always give pointers too if you end up getting one.
@NinChocolate Alrighty, that's cool. Stuffed peppers took some time, for a first time, they were really good. I think I could improve at making them. Those peppers sound good, as well as that walnut cake!
Digging around my phone, I happen to found pictures of some of the things I've cooked. First picture is goulash, mom taught me how to make it as it was a family recipe. Made it last winter and it was great for a very cold day. It takes hours to make, prep work is straight forward, but you let it cook for a long period, checking it.
Also, the aforementioned mac and cheese I made, sauce from scratch. As for why the Troll figure, I learned the recipe from an activity book DreamWorks released to promote Trolls World Tour. When looking at it, I decided to try it since I've been wanting to make homemade mac and cheese for some time. Had it there when I took the pic.
After making this, I prefer it over boxed mac and cheese. I don't eat this often, so I make it once in a blue moon.
